Nothing BEATS the BEET

Reading the latest article from the blog gave me the idea to share my love for veggies with you! I might not wear too much colors but my plate is full of them!

Today I will pick one of my favorites this season - THE BEETROOT

Low in calories and high in nutrients, not many vegetables beat the beet and I have some every day, I might just turned red soon :)


The color of beetroot it’s simply amazing (be careful though when cutting it, it leaves big stains so better use gloves)

RED fruits and veggies contain antioxidants that contribute to heart health and also help prevent certain cancers. And beetroot specifically boost stamina to help you exercise longer! 

So there you go! The reason I start my mornings with my beet juice - one of the richest dietary sources of antioxidants and nitrates that improves blood pressure and blood flow throughout the body, including the brain, heart, muscles, and more.


My favorite combo for breakfast: The DETOX juice, this high-fiber root veggies and fruit keep things moving through the digestive tract, while ginger calms your stomach.


INGREDIENTS: beet root, apple, carrot, ginger (I use a lot, 3-4 cm piece, I like my juice to be spicy)

I drink my juice first thing in the morning, on my emty stomach.


For the doze of protein after your work-out (lunch or dinner) try the BEETROOT SALAD

I use fresh or boiled beetroot together with goat cheese (I keep it in the hot oven for 2 minutes before I put it on the plate), bunch of baby spinach and seed & nuts (quinoa and walnuts), for a light but filly delicious salad.



For a crunchy&salty snack - BEETROOT CHIPS

It’s first time I try this one (next time I will slice even more thinly the beets - very important so you get all the pieces crunchy)


2 medium beets, thinly sliced
1 tsp. cold-pressed extra virgin olive oil
Dash of sea salt ( I used the one from Jamie Oliver with thyme and lemon)

1. Preheat oven to 180° C.
2. Place beets on tray/baking sheet, brush with olive oil and sprinkle with sea salt.
3. Bake 20-25 minutes, turning once halfway through.
